Fungivora

“Fungivora: A Passion for Mushrooms” is a lecture presented by Olga Daniela Vasquez and Juan Pablo Reyes. Fungivora is a specialty fungi farm that uses low-tech processes and agricultural waste to grow different species of edible fungi. The presenters seek to work under the principles of circular economy and promote local consumption, both in the resources they use and the products they offer. Fungi are to be celebrated as a valuable resource, not only for their exquisite flavor but for their contribution to a healthier and more balanced world.
